Thrifty Tuesdays at Resorts World Sentosa went on for a month and I was lucky enough to realise it in the last week and got us a table at Forest! One thing to note about their reservation systems is all calls get directed to one hotline and it usually goes unanswered at peak hours which refers to most part of the day except maybe after 8pm.

Open concept kitchen and I spied Chef Sam Leong!

Chinese dining layout.

Time to be thrifty for more extravagant meals ahead.

Amuse bouche of pickled tomatoes and granita was served up, resembled pickled plums to some regard in its sweet and sourness. Acquired this is.
Crisp-fried Mushrooms coated in Wasabi Mayonnaise, with Avocado and Tomato Salad
The definition of tomato salad comprised of a slab of tomato topped with avocado and mushrooms. Wasabi was too faint to discern yet I enjoyed this open-faced salad.
Baked Chicken Chop with Salt and Ginger
A juicy chicken chop served with a tangy thai-inspired salad. Both complemented each well and while it was ordinary looking, I enjoyed it tremendously.

Japanese Pearl Rice with Seafood Broth topped with Crispy Rice
I was looking forward most to the pumpkin rice but it has since been removed from the menu. Served with a side of crispy rice, it was novel scattering around the rice broth and slurping it up.
Hearty well flavoured goodness which the companion considered it "a common sight in Hongkong". I, on the other hand, enjoyed it tremendously.

Chilled Cream of Mango Sago and Pomelo with Ice Cream
Green tea icecream was a spoiler for the dessert.
It is a good showcase of their culinary abilities but better time management is ideal. Chef Sam Leong breathed life into Forest and kept the magic alive with these wonderfully created dishes. The inconsistency showed through when a table that arrived so much later received their dishes promptly and even wrapped up dinner way before I had my rice dish.
Pray hard that this promotion gets revived later so I can attempt more of their restaurants!
