Flavours of Asparagus @ Pool Grill, Singapore Marriott Tang Plaza Hotel

~Invited Session~

White asparagus is back on the menu of Pool Grill at Singapore Marriott Tang Plaza! Recounting the last few years, I have been pampered yearly by the team who takes pride in including this juicy white gold bulbs into culinary creations in the month of April.

There's something about their bread that gets me all stuffed before the mains are served, all the time. Probably the condiments that come with it that makes this loaf so irresistible.

Executive Chef Matthew Van Der Zwan presents an all new white asparagus menu!

Steamed White Asparagus with Poached Egg and Hollandaise Sauce ($22)

I always feel the best way to taste any ingredient is to have it steamed - the tendency to over cook and over marinate anything is high for home cooks like myself so I always leave it to the experts to deal with these prized delicacies. White asparagus in particular, tastes best steamed. Sweet, juicy and I would exchange my roasted potatoes for these with a perfectly runny egg - except mine was a tad overcooked. I liked the touch of hollandaise which really reminded me of brunch food.

Mimosa Style Gratinated White Asparagus with Manchego Cheese and Chorizo Migas  ($24)

Chef could have been a tad more generous with the shaved manchego cheese and chorizo migas bits, else this would've been perfect 10 with a slab of beef steak done medium.

Squid Ink and Scallop Ravioli with White Asparagus and Tomato Butter ($38)

Last but not the very least, these squid ink scallop raviolis are delish. Pasta bulbs infused with squid ink and served with scallop carpaccio.

Available for lunch and dinner all week long, the delicacies start at $22.
