Regional Hawker Showcase at Raffles Courtyard

Raffles Hotel Singapore is thrilled to announce the first-ever Regional Hawker Showcase at Raffles Courtyard, a series celebrating the well-loved Southeast Asian hawker specialties and the remarkable hawker talents behind them. Building on the resounding success from the launch of Hawker Stories in 2022, Raffles Courtyard and Makansutra reunite to unveil an enthralling series that features four regional hawkers and their delectable delicacies. From 3 July to 8 October 2024, this editior will showcase a plethora of unique creations that cannot be found in Singapore, inviting the community to discover these cherished local specialties and savour the finest of Southeast Asian Street food hawker culture.

The first instalment begins from 3 to 9 July with Pak Buyung Haryanto from Bandung, Indonesia, wh hails from a family of successful street food entrepreneurs, with his mother and siblings each operating their own martabak restaurants. His specialty dish, Pork Martabak, features a hearty, crispy roti crafted from homemade roti batter, generously packed with a savoury medley of eggs, coriander, onions, ham, preserved meats, seasoned bacon and smoked ham, and served alongside freshly made spicy sambal matah, a Balinese delicacy.

Martabak as it is prepared

Each regional hawker has been carefully selected in partnership with local food company Makansutra and its founder, KF Seetoh. Spanning four instalments, these hawkers will serve their specialty dishes in the lush alfresco setting of Raffles Courtyard with each instalment exclusively available for one week, from 3:00 PM to 9:00 PM daily.

-    Specialty Dish: Banh Khoai

Lusciously laced with locally procured fresh ingredients such as, shrimp, squid, fish, and minced pork atop crisp, leafy greens, each Banh Khoai is accompanied by a piquant fish sauce specially sourced in Vietnam, a genuine embodiment of food made from the heart.
