Punjab Grill by Jiggs Kalra @ Marina Bay Sands

This is probably only my second brush with Punjabi food, a lesser known cuisine to me. Pubjab Grill by Jiggs Kalra is designed to please both the vegetarian and carnivore in their culinary showcase of an epicurean journey through Indian’s richly diverse Northwest Frontier Province — the undivided Punjab region.

We were served amuse bouches of breaded mash potato served with a skewer - a crispy delight.

Next, we were also pampered with pompadoms and a trio of dressings. For the first time, pompadom and I made peace and struck a chord.I am not a fan of this greasy cracker yet this was barely oily, so light and can replace potato chips for me.

Yogurt dips and chutney formed the dips for this crunchy appetizer. More, please!

Murgh Makhani ($38)
Tandoor-grilled tikka of chicken, simmered in satin, smooth tomato gravy, rich in cashew and made piquant with dried fenugreek

Also known as butter chicken, this creamy dish is so tasty, it is a no brainer why rice and naan are recommended with it. Great for soaking up the gravy and if all gravies were this delicious, I would be satisfied just having gravy and rice. Barely spicy, the grilled chicken is peppered with enough seasoning and washed over with a gravy so smooth, I could eat this for every other Punjabi meal.

Meat Punjab Grill ($42)
Lamb Shoulder, Angeethi, Thyme, Pepper and Freshly Pounded Pepper

There is an option of having this with bones or boneless, for sure the bones would have given this more flavour yet laziness got the better of me for this. Nonetheless another delicately executed dish.

Naan ($10)
Butter, Garlic 

2 baskets of butter and garlic naan to share amongst three of us was indeed more than suffice. I love a hand pulled naan, the density and flavours are unrivaled.

An over rated and possibly passe way of serving wet napkins.

Expect no less of an experience at Punjab Grill, dishes are meant for sharing and flavours are not the usual spice laden. While I would not categorize it the same as Indian, it is a characteristic cuisine on its own and definitely worth a return.
