Hilton is one of the few hotels without a Chinese restaurant but they pride themselves on their fusion cuisine.

Poached Fragrant Chicken Roll, Jellyfish with Lemon and Fragrant Oil Dressing, Tempura Shimeiji Mushroom Coated with Ginger Dressing, Mini Octopus and Pickled Vegetables in Sesame Chilli Dressing, Chilled Prawn in Cafe Latte Dressing Served with Pineapple Salsa

This was generally decent. The jelly fish was a tad spicy but the personal favourite was the fried mushrooms – tasty and definitely new!
Braised Shark's Fin with Crabmeat and Bamboo Pith
This is hardly one with all the goo and clumps – too generous on starch I say!
Sauteed Fresh Scallop with Coral Clam and Green Asparagus in XO Sauce
Favourite one with the spice! Loved the coral clams too – crunchy delight!
Traditional Cantonese Style Steamed Live Atlanic Cod Fillet
This expensive cod was unlike the usually firm succulent bites that I have been used to. This was flaky and loose to bite.
Crispy Roast Chicken in Sze Chuan Hot and Spicy Sesame Crust
Upfront, I love the crackers that came with it. Hardly oily yet super addictive. Smelt too heavily of chicken – yikes. Spicy…where??
Braised Abalone and Beancurd with Seasonal Vegetables
None too extraordinary.
Deep fried Boneless Duck in Mongolian Dressing
Fusion probably took over from here with breaded duck breasts in a tangy acquired sauce. I thought this was a mismatch and the duck would fare better without the proposed sauce. It also did not help that the duck was cooked to varying degrees at different parts.
Wok-fried Squid Ink Noodles with Butter, Mushroom and Ham
Possibly the star of the night with the kitchen trying to marry an Italian into a Chinese family. Fell flat with disappointment. The noodles hardly bore a trace of squid – otherwise just coloured black. Cream sauce was ordinary with seafood strewn in. Uninspiring dish methinks – eefu noodles anyday!
Chilled "Koi" Mango Pudding
Shaped like a koi, it was possibly the only
indication of a sweet finish. Mango in mango juice was the redeeming
grace for this thick gloppy mango flavoured kueh called jelly.
Service is splotchy, especially with waitresses
hurrying to clear the dishes the moment the next dish is about to be
served up. Almost as if it is a sin to have more than one dish on the
table. Hilton hardly impressed, apart from the brand
name. It would have been divine if their famed cheesecakes were part of
the dinner. Parking is a major nuisance too – I do suggest heading
straight to The Forum for pocket friendly parking fees.
