Dumpling festival came and went without much fuss...in fact, I didn't know about it till days before. This year, we decided to try something out of the ordinary bak changs you can get on any other day...
Well like what chefs are saying, consumers are more game for novelty. My family and I belong to the new age eaters.
Pine Court's Abalone Shark's Fin Dumpling. It's bigger than your usual bak chang, but not significantly bigger. Was somewhat tempted by the Celestial dumpling, weighing in 2.5 kg at a grand tune of $68.80, or in the realm of the 60's. Comparatively, this 500g (I think it's about that weight) was a far cry and we were apprehensive, truth be told.
I kept reminding and somewhat psychoing myself that it's got abalone and shark's fin. Not the normal fatty pork and chestnuts.

Sliced open to a revelation of flavours..a sliver of abalone, shark's fins, generous servings of chestnuts, pork cubes, oysters, chinese Jin Hua ham and peppered with flavours. It's almost as if the finest of all ingredients were served in that one dumpling.
My mom summed it up "a dumpling with all things preserved". Not your usual dumpling, neither are the ingredients your usual cny fare.
We loved it tremendously, the rice wasn't too clumpy or soft, just right in tendency. The meat and other ingredients were well blended..one word: delicious. Every bite was uber yummy. I wouldn't mind a carbo-overload just on this!
Would have loved to try foie gras next...well next year maybe?
